Smoked deer soup
Game food is quite popular, especially if you know a hunter or you are a hunter. Purchasing it in local stores might cost a fortune. Imagine that a smoked deer roast costs around 79 euros/ kg. Usually, the deer roast is flavored simply with salt and pepper and smoked until 52 degrees. The roast can be stored in a fridge for a month without going bad. You can also eat it as it is or make a delicious soup.
According to Viltgården, eating game meat is an eco deed because game animals live freely in nature and eat forest food. It is one of the most delicious and unique dishes in Finland. The game's carbon footprint is small because it does not require production facilities. It does not also burden our waterways or climate. Our ancestors were hunters before we even started with agriculture.
Serving: 4-5 people
Time: 30 minutes
300g smoked deer roast
oil
1l water
1 potato
1 bag of frozen root vegetables
a pinch of salt
a pinch of pepper
1 vegetable or meat stock cube
Instructions:
Add the meat stock or vegetable stock and boil the water.
Add the chopped potatoes and frozen root vegetables.
Season with a pinch of salt and pepper.
Chop the smoke deer roast into cubes and combine with the vegetable soup.
Let boil for 10-15 minutes.
Serve with Finnish dark island bread (saaristolaisleipä) with butter
