Smoked chicken pomegranate salad
Updated: Sep 29, 2022
Smoked chicken pomegranate salad is a delicious eye-catcher for birthdays and other celebrations. Here is just one variation of my favorite recipe for one of those festive salads that are not only delicious but also a decoration of the banquet table itself. Salad is called Little Red Riding Hood, as a well-known fairy tale, because of the red color deco at the top. By changing the ingredients, you can quickly get a meatless, vegan, milk-free version of this salad.

I have used this smoked chicken, which I purchased from Estonia, because I have not found it in Finland. Of course, the smoked chicken, you can replace with grilled chicken, ham, sausage, salmon, or omit it completely, so it becomes a vegetarian version.
Ingredients:
Egg 4 pcs
Carrot, 3 pcs
Potatoes 4 pcs
Pomegranate seeds 2 dl
Mayonnaise 100 g.
Walnuts 160 g.
Smoked chicken legs 2
Dill
Preparation:
Boil eggs, carrots, and potatoes, cool, and chop into small cubes. Remove the meat from the chicken legs and cut it into small pieces. Cut into small pieces 60 g. walnuts. Mix the carrots, potatoes, eggs, chicken, walnuts, and mayonnaise. You can also add grated cheese to the salad in your refrigerator. Put the mixed salad in a small bucket for the night (I used a Turkish yogurt 1kg. can for this). The next day, place a plate over the can and turn. Sprinkle pomegranate seeds on top, and place walnuts on a plate around a salad. Chop dill and decorate the top of the salad.
Enjoy!
