Savoury sandwich-cake for Vegetarians 


Sandwich "cake" is a savory dish resembling a sandwich. It consists of layers of bread with creamy fillings, each customized to individual preferences.


In this recipe, we draw inspiration from the Finnish language. Voi, which means butter, and leipä, which means bread, combine to form voileipä or sandwich. Similarly, kakku means cake. This dish, known as voileipäkakku in Finnish, is usually served at special occasions such as birthday and graduation parties. When a Finn invites you to a 'kakkukahvit'- celebration, it typically means a party with a serving of sandwich cake and coffee as some snacks.


Sandwich cakes are a canvas for your culinary creativity. They can take many forms, and you can prepare them according to your favorite ingredients in a multitude of ways. So, unleash your imagination, be bold with your choices, and enjoy the freedom to create and recreate this dish in endless variations.  



Ingredients:

12-15 slices of soft toast-style bread of your choice

1 container of favorite cream cheese (around 300 grams) or Greek-style yogurts (optional)

1 red pepper (small size)

1 yellow pepper (small size)

1 cucumber (medium size)

3 spring onions

5 radishes (optional)

Some dry/fresh herbs such as till, basil, or mint (optional)

Some sun-dried tomatoes (half a cup)

3 spoons of olives or caper/capris

1 small can of mais






Instructions 


Garnish

  • Slice the olives thinly, reserving some for garnish.

  • Reserve a spoonful of corn for decoration.

  • Leave 5 spoons of cream cheese/Greek yogurt for decoration.


  1. Take a big bowl, preferably one with at least 2 liters capacity, and chop your veggies into small cubes: red and yellow peppers, corn, cucumber, sundried tomatoes, radishes, spring onions, and other fresh and dry herbs. Transfer them to the bowl. Similarly, take a big plate or tray that can accommodate at least 4 layers of bread to prepare the layers of bread and fillings. Mix well the cream cheese or Greek yogurt (if using) with the chopped veggies and herbs. Set aside while you prepare the slices of bread.

  2. Take a big plate or tray to prepare the layers of bread and fillings.

  3. Put 3-4 slices of bread tightly next to each other flat on the surface of the plate. 

  4. With a spoon, take the mixture from the bowl and spread it nicely on layers of bread.

  5. Cover the first layer with the second set of bread, and spread the filling again on top. Continue until finishing all the breads.  

  6. Cover the whole dish thin-evenly with the remaining cream cheese left for decoration. The entire dish should look white all around.



The sandwich cake is ready. You can use your imagination to decorate its surface with slices

of radish, cucumber, cherry tomatoes, and olives. Have a blast to decorate the sandwich cake in the shape of flowers, trees, ladybugs, and more.
