Rosolli, Traditional Christmas side dish
Rosolli is a side-dish salad eaten cold as part of the traditional Finnish Christmas meal. It is a colorful beautiful-looking dish with the red color of beetroot, which fits the Christmas table very well. It is full of flavors and relatively simple to make. You can easily create different versions of it according to your taste.
Ingredients:
4 beetroots
3 carrots
2 potatoes
1 onion
1 apple
1 pickled cucumber
Instructions:
Boil the beetroots, carrots, and potatoes, let it cool, and peel.
Chop all the roots into small cubes.
Cut the rest of the ingredients into small cubes too.
Transfer all the ingredients to a large bowl, mix well.
The dish is ready to be served as it is or to be eaten with whipped cream; the cream is beaten with a few drops of vinegar and beetroot liquid to give a nice pinkish color.
Tips:
-You can always modify the dish according to your taste. If you like pickled, add 2-3 pickled cucumbers. Or, if you like the combination of apples, add one more apple chopped finely.
-To make the dish even easier, you can use the pickled beetroot ready-made from the supermarket.
-Many people prefer to make Rosolli without potatoes.
