Berry sorbet

Berries grow in different varieties of Finland and are a part of the traditional Finnish vegan diet. Studies show that berries are natural “superfoods”; therefore, it is wise to use them since Finnish nature offers them abundance. Berries contain many health benefits with various vitamins, minerals, and antioxidants.


Ingredients for simple Berry-sorbet

  • 2 cups berries such as raspberries and blackcurrants

  • 3 dl water

  • 2 tablespoons lemon juice

  • ½ cup brown sugar


Instructions

  1. Place the berries, lemon juice, and water in the blender

  2. Blend and puree until smooth.

  3. Press the mixture into a sieve to remove the seeds, and add more sugar if needed.

  4. Transfer the mixture juice into a pan with sugar and bring to a boil

  5. Cook for 1-2 minutes.

  6. Mix well until the sugar melts

  7. Remove from the heat, and let it cool in a container.

  8. Put the container in the freezer until it is fully frozen sorbet.




Whenever you wish to eat the sorbet, it is better to leave it sitting for a while outside of the freezer to get slightly softer because the sorbet might have a hard texture. Or, if you like it as hard as popsicles, enjoy it that way.


Tips:

You can choose any fresh berry you like or a mixture. In the supermarkets’ freezer, one can also find frozen berries suitable.

For a healthier sugar-free version of this sorbet, you can use soft dates and blend the dates with berries and water and follow the rest of the instructions.

You can enjoy your sorbet with any topping you like, such as chocolate topping, licorice topping, caramel sauce, etc. In Finnish supermarkets, one can find all these toppings ready-made. Or garnish your sorbet with fresh mint and some chocolate chips.
